Ingredients
Here’s what you’ll need to make this delicious stew:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium sweet potatoes, peeled and cubed
- 1 red bell pepper, diced
- 2 cups vegetable broth
- 1 (14-ounce) can black beans, rinsed and drained
- 1 (14-ounce) can diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder (adjust to preference)
- 1/2 teaspoon ground coriander
- Salt and pepper, to taste
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped (optional, for garnish)
Instructions
Begin by preparing all your ingredients, dicing the vegetables, draining the beans, measuring out the spices, so that everything is ready to go into the pot.
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes or until translucent. Add the minced garlic and cook 1 more minute or until fragrant.
Add the cubed sweet potatoes, red bell pepper, cumin, smoked paprika, chili powder and ground coriander. “Give it a good stir so the spices coat the vegetables, and sauté for 2–3 minutes to bloom the flavors.
Add the vegetable broth, diced tomatoes (with their liquid), and black beans. Add the mixture and bring to a boil, then lower the heat to low and simmer uncovered for 25–30 minutes, stirring occasionally. The sweet potatoes should be cooked through and the stew thickened slightly.
Stir in the lime juice, and salt and pepper to taste. Stir well.
Serve the stew over hot, garnished with fresh cilantro, if desired.
