Here’s everything you’ll need:
- Sausages: 4 Italian sausages (mild or spicy)
- Bell Peppers: 1 red and 1 green bell pepper, diced
- Onion: 1 medium onion, diced
- Garlic: 2 cloves, minced
- Olive Oil: 1 tablespoon (for grilling and sautéing)
- Balsamic Vinegar: 1 tablespoon (for added flavor)
- Sugar: 1 teaspoon (to balance the flavors)
- Seasoning: Salt and black pepper to taste
- Buns: 4 hoagie rolls or hot dog buns, lightly toasted

Instructions
Heat your grill or grill pan to medium-high heat. That means sausages cook evenly with a lovely char.
Coat the sausages with olive oil and grill the sausages for 10-12 minutes, turning occasionally. Then cook them through and let them rest; it keeps them juicy.
Heat the olive oil in a skillet over medium heat. Add the peppers, onions and garlic. Cook until softened, stirring for 5-7 minutes. Add balsamic vinegar, sugar, salt and pepper, and cook an additional 2 mins to marry the flavours.
Toast your buns on the grill or in a dry skillet until just lightly golden. This gives a nice texture and prevents the buns from becoming soggy.
Put a sausage in each toasted bun. Spoon the sautéed peppers and onions on top. For an added touch, scatter with chopped parsley or drizzle with mustard or mayo.
Serve immediately while warm! Serve with your favourite sides such as fries, coleslaw or a crisp salad.
