Cheeseburger Filling 

  • 1 lb (450 g) ground beef (use extra-lean for less grease) 
  • 1 small onion, finely chopped 
  • 2 tbsp ketchup 
  • 1 tbsp yellow mustard 
  • 1 cup shredded cheddar cheese 
  • Salt and pepper to taste 

Pockets 

 

  • 1 can of crescent roll dough (or puff pastry as an alternative)
  • 1 egg, beaten (for brushing) 
  • Optional add-ins (based on your taste): diced pickles, jalapeños, or crispy bacon bits

Instructions

Cook the Filling

Start by browning the ground beef in a large skillet over medium heat. Sauté until it’s no longer pink, then drain the grease. Add chopped onion, ketchup, mustard and salt and pepper to taste. Mix thoroughly then continue cooking for another 2 to 3 minutes, stirring frequently until combined. Transfer to a plate and let cool slightly.

Prep the Dough

Preheat your oven to 375°F (190°C). Place the crescent roll or puff pastry on a lightly floured surface. Dough to be placed in 8 equal squares (or rectangles, depending on your dough’s shape).

Assemble the Pockets

Place about 2 tablespoons of the beef mixture in the center of each square. Crowned with a generous sprinkle of shredded cheddar cheese. Add any optional add-ins, such as diced pickles or jalapeños, at this point.

Fold each dough square over its respective filling, making a triangle or rectangle; press the edges together firmly to seal. Crimp the edges with a fork for extra security as well as embellishment.

Brush and Bake

Transfer the pockets to a parchment-lined baking sheet. Use beaten egg to brush the tops, for a golden, glossy finish. Bake for 12-15 minutes, or until the dough is golden brown and flaky.

Cool and Serve
